Cheese Buns



CHEESE BUNS

Ingredients :

350 gm. Bread flour
10 gm. Instant Yeast
60 gm. caster sugar
1/8 tsp. salt
1 Tbsp. Condense milk
100 gm. cold milk
50 gm. cold water
1 egg
40 gm. Margarine

Filling :

250 gm. Cream Cheese
120 to 150 gm. icing sugar
1 tsp. Vanilla essence

Method :

(1) Combine flour, yeast, sugar, salt into a mixing bowl. Mix for about 1 min. then pour in themilk, water and egg gradually.
(2) Beat with medium speed until smooth. Then add in margarine and continue beating until the dough turns smooth.
(3) Rest the dough for 45 mins.
(4) Scale and weigh the dough into 60 gm. each and then cover it. Rest for 10 mins.
(5) Roll out the dough and wrap the fillings and leave to rise on a baking tray for 45 mins.
(6) Brush the buns with egg and then bake at 190C for about 10 mins.

Fillings :

Cream the cream cheese with icing sugar and vanilla essence until creamy. Put into fridge to set for awhile for easy wrapping. If you want the fillings to be less watery, cut down on the icing sugar.

Orange Mocha Brownies



ORANGE MOCHA BROWNIES

Ingredients :

1 1/2 cups plain flour ~ sifted
1/2 cup cocoa powder
1 tablespoon coffee powder
1 cups castor sugar
250gm margarine ~ thawed
4 eggs ~ lightly beaten
1 teaspoon vanilla essence
1/2 cup orange juice
3/4 cup chocolate chips

Method :

1. In a bowl mix all ingredients except orange juice and choc chips. Beat using mixer at medium speed until well combined.
2. Pour in orange juice. Continue mixing.
3. Stir in the chocolate chips
4. Pour into baking tray, lined with baking paper overhanging from both sides.
5. Bake for about 30 minutes in a preheated oven at 170 degree celcius.
6. Remove from oven, leave in tin for 5 minutes. Remove from the tin onto the wire rack to cool.
7. Pour and spread evenly the chocolate frosting on the surface. Cut into squares.

Frosting :

200g dark chocolate bar
1/4 cup whip cream
1 tablespoon coffee powder

* Combine all in a casserole and microwave for 1 min on HIGH. Take out and stir well until you get a lovely choc frosting.
* Or just double-boil over medium heat.


Corn Muffin Like Kenny Rogers Roasters



CORN MUFFIN

Ingredients :

1/2 cup butter
2/3 cup sugar
1/4 cup honey
2 egg
1/2 teaspoon salt
1 1/2 cups all-purpose flour
3/4 cup yellow cornmeal
1/2 teaspoon baking powder
1/2 cup milk
3/4 cup frozen corn

Directions :

1. Preheat oven to 400°F.
2. Cream together butter, sugar, honey, eggs, and salt in a large bowl.
3. Add flour, cornmeal and baking powder and blend thoroughly. Add milk while mixing.
4. Add corn to mixture and combine by hand until corn is worked inches.
5. Grease a 12-cup muffin pan and fill each cup with batter.
6. Bake for 20-25 minutes.

Beef Burger



BEEF BURGER

Ingredients :

Minced meat
Onion ~ finely diced
Tomato ~ finely diced
Corriander leaves ~ finely chopped
1 Egg ~ lightly beaten
Bread crumbs
Salt to taste
Black pepper ~ freshly grounded

Method :

1. Mix all and shape into burger shapes.

Egg Tarts



EGG TART

Base

500gm flour
1 1/2 cup margarine
1 tablespoon shortening
2 tablespoons sugar
1 egg

Method:

1. Mix all the ingredients (except egg) to form like bread crumbs.
2. Add in egg and mix till a soft dough is formed
3. Roll till about 1/2cm thick and cut using a round cutter
4. Put the circle dough into the greased petty tins
5. Prick base of each tart with a fork
6. Bake for 10 minutes at 180C
7. Take it out of the oven and pour the filling into the tart
8. Bake for another 5 - 10 minutes
9. Ready to serve

Custard (filling)

1 cup evaporated milk
4 eggs 1 cup sugar
1 cup tap water
1 tablespoon custard powder
1/2 teaspoon vanilla essence
a bit of yellow coloring

Method :

1. Mix well all the ingredients
2. Pour into the 1/2 cooked tart

Note :

1. Instead of evaporated milk, I just use fresh milk
2. If you find the dough a bit dry, just add a bit more margarine.
3. Kak Liza once told me, it'll taste nicer if you use 1/3 margarine + 2/3 butter instead of just margarine. But then, I made just using margarine..and the taste is lovely enough for me.

Chicken Kung Pao



CHICKEN KUNG PAO

Ingredients A :

600g chicken fillets ~ diced
corn flour
salt

- Coat the chicken fillets with salt and corn flour and fry.
- Once cooked, remove from oil and place on the kitchen towel to absorb oil.

Ingredients B :

100g cashew nuts ~ fry with oil
30g dried chillies ~ cut into 1 to 1.5 inches long
2 white onions ~ diced
4 garlic ~ pounded
2 inches fresh ginger ~ pounded
1 green pepper ~ diced
3 tablespoons oyster sauce
2 tablespoons chillie sauce
1/4 cup water
cooking oil
salt ~ if needed

Method :

1. Heat a bit of oil in a wok and fry the dried chillies till crispy. Set aside.
2. Saute ginger and garlic till fragrant.
3. Add in the diced white onion.
4. Add in the green pepper, fried chicken, oyster sauce, chillie sauce and a bit of water.
5. When there's only little liquid left, add in the fried cashew nuts, mix well and remove from heat.

Note :

1. I didn't have any green peppers available that time, so I didn't put any.
2. I just pun a bit of chillie sauce and a bit of dried chillie so that it won't be too hot for the kids to be able to enjoy them
3. And a bit of tomato sauce to give it a more tangy taste.

Apam Pisang Feqah



APAM PISANG FEQAH

Ingredients :

1 cup mashed ripe bananas
1 ½ cups sugar
3 cups flour
3 tablespoons butter/margarine
2 teaspoons bicarbonate soda
1 teaspoon cream of tartar

Method :

1. Blend mashed ripe bananas, sugar, margarine, bicarbonate soda and cream of tartar together.
2. Fold in the flour, a little a time.
3. Spoon into the prepared cups.
4. Steam for 12 minutes.

Cream Cheese Buns



CREAM CHEESE BUNS

Ingredients : 

325 gm. Bread flour 
10 gm. yeast 
1 tsp. Bread improver 
1/2 tsp. salt 
1 1/2 Tbsp. Milk Powder 
60 gm. castor sugar 
120 ml. water 
1 egg 
45 gm. margarine 

Method : 

1. Beat the above ingredients together except margarine for about 10 mins. 
2. Add in butter and beat for another 10 mins. till dough is smooth and elastic. 
3. Leave it to proof for about 45 mins. 
4. Remove from mixer, roll into small balls 60 gm. each and let it rest for another 10 mins. 
5. Roll out the small dough, wrap with cream cheese filling and seal tightly. 
6. Put into a fluted greased mould and leave to proof for another 45 mins. 
7. Pipe the mexico topping on top of the buns - in a coil shape and bake in preheated oven at 180C for about 15 mins. 
8. Cool on wire rack. 

Cream cheese fillings : 

Mix them together and stir till smooth. 

220 gm. Cream cheese 
50 gm. icing sugar 
1/2 tsp. vanilla essence 

Note : 

For added flavour, add in 2 Tbsp. of Blueberry Pie filling and omit the vaniila essence and substitute for Blueberry essence
